- 3 c. rhubarb pieces
- 1 1/2 c. sugar
- 3 Tbsp. flour
- 1/8 tsp. salt
- 2 eggs, beaten
- 1 Tbsp. butter or oleo
- pie crust dough (for double crust)
Directions

1Cut rhubarb into 1/2 pieces and measure 3 cups in a bowl. Sift flour, sugar and salt together and mix with rhubarb.

2Let stand while rolling out 1 crust and fit in pie pan.

3Stir beaten eggs into rhubarb mixture and pour into crust.

4Dot with butter. Make a lattice top crust of strips of dough.

5May sprinkle a little cinnamon or nutmeg over rhubarb.

6Bake 10 minutes at 425° and about 30 minutes at 325°.

7Filling will be a little bubbly when done.
