  • 1 to 2 eggs, beaten
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • 1 1/4 c. sugar
  • 2 c. rhubarb, sliced
  • 2 Tbsp. butter

Directions

    Mix sugar, flour and salt.

    Add beaten eggs; mix with rhubarb and pour into large unbaked pie crust.

    Dot with butter and cover with dough strips.

    Bake for 15 minutes at 450°; reduce heat to 375° and bake 15 to 20 minutes longer until rhubarb is tender.
