- 4 c. boiling water
- 1/2 c. dry pigeon peas
- 1 1/2 tsp. salt
- 1 c. cooked rice
- 1/2 c. chopped onion
- 2 Tbsp. butter or margarine
Directions

1Place water in 3-quart saucepan.

2Bring to rapid boil.

3Wash the peas well under cold running water, about 2 minutes.

4Place peas in boiling water.

5Add salt; cover and reduce heat.

6Simmer 45 minutes.

7Stir in rice, onion and butter.
-
8Stir to blend. Cover and simmer until all water is absorbed, about 2 minutes. Fluff mixture with fork.

9Makes 4 to 6 servings.
