Rice Balls

Ingredients

  • 1 lb. Carlonia rice
  • 1 stick butter
  • 6 egg yolks
  • 6 egg whites
  • 1 large onion, minced
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 large can redi-bread crumbs
  • 1 (8 oz.) jar Colona Parmesan cheese
  • 2 qt. water
  • 1/2 gal. Wesson oil

Directions

    Place in a large pot butter and onion.

    Let saute.

    Add 2 quarts of water; bring to boil.

    Add rice; let rice cook until tender.

    Add egg whites, pepper, salt and cheese; mix well. Remove from heat.

    Let cool for 1 hour.

    When cool, shape into balls and dip into egg yolks and bread crumbs.

    (Could be stuffed with meat or cheese.)

    Deep fry balls until brown.
