Rice Casserole

  • 3/4 lb. Monterey Jack cheese
  • 2 c. sour cream
  • 1 can chopped green chiles
  • 3 c. cooked rice
  • 1/2 c. grated Cheddar cheese
  • salt and pepper to taste

Directions

    Cut Jack cheese into strips; mix sour cream and chiles.

    Butter a 1 1/2-quart casserole dish.

    Season rice with salt and pepper. Layer rice, sour cream mixture and cheese strips (in that order). Finish with rice on top.

    Bake at 350° for 30 minutes.

    Sprinkle with Cheddar cheese and allow to melt.
