- 1 qt. sliced fresh zucchini
- 1 lb. lean ground beef
- 1 c. chopped onions
- 1 clove garlic, crushed
- 1 (8 oz.) can tomato sauce
- 1 c. cottage cheese
- 1 c. grated Cheddar cheese
- 1 beaten egg
- 2 c. cooked rice
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. basil
- 1/2 tsp. oregano
Directions

1Cook zucchini in boiling salted water about 2 or 3 minutes. Drain.

2Saute meat, onions, garlic and seasoning until onions are transparent.

3Stir in rice and tomato sauce.

4Blend cottage cheese and egg.

5Arrange half of zucchini slices in a buttered shallow pan (2-quart casserole).

6Spoon mixture over zucchini, then arrange rest of zucchini on top.

7Place in 350° oven for 20 to 25 minutes or until bubbly.
