- 2 c. fresh mushrooms
- 1 pkg. Uncle Ben's wild and long grain rice
- 1 medium onion, diced
- 1 large can ripe olives
- 1/2 c. olive oil
- 3 or 4 fresh tomatoes
- 1 c. cubed Cheddar cheese
Directions

1Cut large mushrooms in half and leave small ones whole.

2Boil mushrooms in 1 1/2 cups of water for 10 minutes.

3Save 1 cup of mushroom stock.

4Add olives, mushrooms, stock, rice and seasoning packet; stir well.

5Add olive oil.

6Drop tomatoes in boiling water and remove as soon as skin loosens.

7Peel and quarter, then add to rice.

8Add onion and cheese and stir.

9Refrigerate overnight, then add 1 cup of boiling water and bake for 1 hour at 425°.
