Rice casserole with eggs

Ingredients

  • 3 medium onion, chopped
  • 1 yellow bell pepper chopped
  • 2 small green bell pepper chopped
  • 2 cup cooked rice
  • 3 tbsp olive oil
  • 3 tomatoes chopped
  • 2 celery stalks chopped
  • 1 medium carrot chopped
  • 6 large eggs
  • 1 tsp baking powder
  • 1 salt and black pepper to taste
  • 1 chopped parsley
  • 1 any combination of cheese you like but i didn't add it
  • 1 tsp ground cumin and curry powder
  • 1 red bell pepper

Directions

    in a pan saute onions with 2tps olive oil till it becomes lightly brown then add tomatoes,salt, black pepper ,cumin and curry powder and stir together for 5 mins

    add chopped bell peppers,carrot and celery and continue stirring for another 5 mins and taste it if needs more salt then remove from heat at this step you can add the cheese if you want

    in a large bowel add the rice , eggs and baking powder and mix well then add the sauteed veggies and chopped parsley to it

    pour the mix into a baking pan greased with olive oil and put it into the oven at 200 c for about 20 to 30 mins

    after it comes out flip it over a plate and serve immediately !
