Ingredients
- 1 c. rice
- 1 1/2 c. sugar
- 1/2 tsp. salt
- 1 qt. milk
- 1 doz. eggs
- 1/2 tsp. cinnamon
- 2 Tbsp. shortening
- 1 lb. Ricotta
- 1 (20 oz.) can crushed pineapple, drained
Directions

1Cover rice with water.

2Add salt and shortening.

3Simmer very slowly.

4When dry, add cold milk a little at a time, until cooked. Let cool.

5Add sugar and cinnamon.

6Beat eggs and Ricotta together and add to rice mixture.

7Add pineapple.

8Use your favorite crust or none at all.

9Makes 2 (10-inch) pies or 1 (15 x 10-inch) Pyrex.

10Bake at 350° for 1 hour.
