Ingredients

  • 6 c. milk
  • 1 doz. eggs
  • 2 lb. Ricotta cheese
  • 2 c. sugar
  • 3 c. Minute rice
  • 1 can crushed pineapple (reserve liquid)
  • 1 Tbsp. vanilla extract

Directions

    Cook rice, using liquid from pineapple, with water.

    Add remaining ingredients and beat together.

    Pour into pie plates sprayed with Pam.

    Bake at 350° in preheated oven for 1 hour or until knife inserted in the center comes out clean.
