- 2 to 3 Tbsp. butter or margarine
- 1 Tbsp. grated onion
- 1 c. long grain rice
- 2 c. stock or water
- salt and pepper to taste
- bouquet garni (parsley, bay leaves and thyme)
Directions

1Melt butter in a heavy casserole dish.

2Cook onion in butter over moderate high heat until transparent.

3Add the rice, stirring to coat the grains with butter.

4Pour in the stock or water. Add salt and pepper. Bring to boil over high heat.

5Add the seasonings to the rice.

6Cover.

7Bake in a preheated 400° oven for 30 minutes.

8Fluff with fork and serve.

9Makes 6 servings.
