Ingredients

  • 2 cups chopped scallions
  • 3 tablespoons butter
  • 1 12 cups uncooked long grain rice
  • 3 cups liquid (water,chicken broth or a combo of both)
  • 1 12 cups shredded carrots
  • 12 teaspoon dried thyme
  • 12 teaspoon salt
  • parsley, if desired

Directions

    Saute scallions in butter over low heat; add rice, stirring to coat all grains.

    Add remainder of ingredients except parsley.

    Bring to a boil; lower heat and cook, covered, for 20 minutes.

    When done, toss with parsley, if desired.
