- 1/2 c. rice
- 1/2 c. water (enough to cover rice)
- 1 Tbsp. butter
- 1/4 tsp. salt
- 2 1/2 c. milk
- 1/3 c. sugar
- 2 eggs
- 1/2 tsp. vanilla
- 1 tsp. cornstarch (optional)
Directions

1Cover rice with water and boil until water is gone.

2Add milk, sugar, salt and butter and simmer until rice is cooked.

3Beat eggs along with 1 tablespoon milk and cornstarch, then stir a little of the hot mixture into them.

4Add slowly to keep eggs from curdling. Pour egg mixture into milk and rice.

5Stir until well blended. Add vanilla.

6Pour into serving dishes and sprinkle with cinnamon. Can be served hot.
