- 2/3 c. uncooked rice or 2 c. cooked rice
- 5 eggs
- 3 c. whole milk
- 3/4 c. sugar
- 1 Tbsp. melted butter
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1/2 c. raisins, rinsed in strainer with hot water
Directions

1In large bowl, beat eggs, then blend in milk, sugar, butter, vanilla and salt.

2Stir in cooked rice and raisins.

3Pour into a 9 x 13-inch baking dish.

4Set baking dish into another baking dish, then add water to larger baking dish until 1/2 full.

5Bake at 325° for 25 minutes, or until knife inserted comes out clean. Sprinkle with cinnamon or nutmeg the last 5 minutes of baking.
