  • 4 Tbsp. uncooked rice
  • 4 c. milk
  • 2 Tbsp. sugar or substitute 1/2 c. coconut
  • 1 Tbsp. butter
  • 1/2 c. raisins
  • 1/2 tsp. vanilla
  • 1/2 tsp. nutmeg

Directions

    Combine all ingredients except nutmeg into buttered 8 x 13-inch pan and sprinkle nutmeg on top.

    Bake at 325° for 1 1/2 to 2 1/2 hours.

    Stir twice the first hour, then stir a few times during rest of cooking to stir in crust.

    Let crust form for the last 1/2 hour of cooking.
