Rice Pudding

  • 1/4 c. rice
  • 4 c. milk
  • 1/2 tsp. salt
  • 1 c. additional milk
  • 3 eggs
  • 3/4 c. sugar
  • 1 1/2 tsp. vanilla
  • nutmeg

Directions

    In the top of a double boiler, cook rice, 4 cups milk and salt for 1 hour, stirring occasionally.

    Combine additional milk, eggs, sugar and vanilla in a large bowl.

    When rice is cooked, blend with egg mixture.

    Pour into a greased 7 x 11-inch ovenproof dish. Sprinkle with nutmeg.

    Set dish into a baking pan with hot water. Bake 50 to 55 minutes at 350°.
