  • 1 c. uncooked rice
  • 2 qt. milk
  • 6 Tbsp. butter or margarine
  • 6 eggs
  • 1 c. sugar
  • 2 tsp. vanilla

Directions

    Place rice, milk and butter or margarine in a saucepan and cook on medium heat until steaming.

    Turn to low and simmer for 30 minutes, stirring frequently.

    Beat eggs; add sugar and vanilla. Pour boiling rice mixture gradually into egg mixture and stir. Pour into buttered casserole and bake for 45 minutes at 325°. After 15 minutes, stir and sprinkle with cinnamon.
