- 1 1/2 c. cooked rice
- 2 c. milk
- 2 eggs
- 1/3 c. sugar
- pinch of salt
- 1 tsp. vanilla
- 1/4 to 1/2 c. raisins
Directions

1Cook rice and milk gently in 3-quart saucepan, stirring occasionally until mixture is creamy (about 5 minutes). Meanwhile, combine eggs, sugar, salt and vanilla, slowly stirring rice mixture into egg mixture.

2In processor, stir in raisins (optional).

3Pour into a greased 1 1/2-quart casserole dish. Sprinkle with cinnamon, if desired.

4Place in pan containing 1-inch of hot water.

5Bake at 350° for 45 to 50 minutes.

6Serves 5 to 6.
