- 3 slightly beaten eggs
- 2 c. milk
- 1 1/2 c. cooked rice
- 1/2 c. sugar
- 1/4 c. raisins
- 1 tsp. vanilla
- dash of ground cinnamon
- 1/2 tsp. salt
Directions

1Mix eggs, milk, rice, sugar, raisins, vanilla and salt; mix well.

2Bake in a 10 x 6 x 2-inch pan at 325° for 25 minutes.

3Stir and sprinkle with cinnamon.

4Continue baking approximately 20 to 25 minutes longer until knife inserted halfway between center and edge comes out clean.

5Serve warm or chilled with light cream.
