  • 2 whole eggs
  • 3 egg yolks
  • 1/2 c. sugar
  • pinch of salt
  • pinch of cinnamon
  • 1/2 tsp. vanilla
  • 1 qt. milk
  • 6 Tbsp. cooked rice
  • 5 Tbsp. raisins
  • nutmeg

Directions

    Combine eggs, yolks, sugar, salt, cinnamon and vanilla in a bowl.

    Heat milk in saucepan and gradually add egg mixture.

    Place cooked rice and raisins in bottom of a 2-quart baking dish.

    Pour milk-egg mixture over rice.

    Bake at 350° for 35 to 45 minutes or until set.

    Sprinkle with nutmeg to taste.
