  • 1 c. cooked rice
  • 2 1/2 c. milk (skim is fine)
  • 2 eggs
  • 3 Tbsp. cornstarch
  • 1/2 c. sugar
  • dash of salt
  • 1 tsp. vanilla

    Measure milk in blender.

    Add rice and eggs.

    Blend to chop rice.

    Mix cornstarch, sugar and salt.

    Stir milk mixture into cornstarch mixture in a saucepan.

    Bring to a boil, stirring constantly.

    Add vanilla.

    Chill.
