Rice Pudding

Ingredients

  • 2 eggs, beaten
  • 2 c. milk, scalded
  • 1/2 c. sugar
  • 1 tsp. vanilla
  • 1/4 tsp. cinnamon
  • 1 1/2 c. cooked rice
  • 1/2 c. raisins

Directions

    Heat oven to 350°.

    Combine all ingredients, mix thoroughly and put in 1 1/2 or 2-quart casserole dish.

    Put casserole dish in a pan with about 1 inch of hot water.

    Bake 45 to 60 minutes or until knife inserted in center comes out clean.

    Serve warm or chilled. Instead of cooked rice, can use 1/2 cup uncooked rice, do not scald milk, stir after 30 minutes.

    Add 10 minutes to baking time.
