- 2 eggs
- 2 c. milk
- 1/2 c. raisins
- 1/8 tsp. cinnamon
- 1 1/4 c. cooked rice
- 1/4 tsp. salt
- 1/2 c. sugar
- 1 Tbsp. powdered sugar
Directions

1Separate eggs into whites and yolks.

2Add 2 tablespoons milk to egg yolks.

3Place remaining milk on stove in a double boiler. Wash the raisins.

4Put them in the milk and cook until soft (approximately 15 minutes).

5Add rice; cook 5 minutes, then stir in yolks, salt, sugar and spices.

6Stir well and cook about 3 minutes.

7Remove from stove and pour into serving pan.

8Beat whites of eggs lightly, then add sugar.

9Spread on top of pudding. Brown lightly in oven.

10Serve cold.
