Rice Pudding

Ingredients

  • 1 1/2 c. cold water
  • 1 c. Carolina rice (cooking rice, if using Minute rice, do not follow directions on box)
  • 1 qt. whole milk
  • 1 c. sugar
  • 1 pt. heavy cream
  • 2 tsp. vanilla
  • cinnamon to taste

Directions

    Cook rice in water over low flame until water runs out.

    Add milk, sugar and vanilla (if you like raisins, add about 1/2 cup here) and cook over low flame until rice is of oatmeal consistency (thick).

    Transfer rice into wide pan and cool thoroughly.

    When rice is cooled, beat heavy cream (until it peaks and is quite thick) in separate bowl and fold into rice.

    Sprinkle cinnamon on top and refrigerate.

    Serve with Cool Whip on top, sprinkled with cinnamon.
