Ingredients
- 2 cup water
- 1/2 cup lomg- grain rice
- 1 quart milk
- 2 egg yolks
- 2 cup sugar
- 1/2 tsp salt
- 1/2 tsp vanilla
- 1 ground cinnamon
Directions

1Bring water to a boil and rice.

2Simmer, covered, 15 to 20 min

3Add milk ( be careful does not boil over) and continue to cook , stirring often ,for @ 30 min,or until rice is soft and mixture is thick.

4Beat egg folks and sugar until thick and pale on color.

5Gradually stir in rice mixture, mix well, and return to saucepan

6Add salt cook over low heat for 3 min, stirring constantly to prevent curdling.

7Before pouring into pudding dishes add vanilla

8Pour into pudding dishes and sprinkle with cinnamon.

9Serve warm, or cool to room temperature and then refrigerate; serve cold
