Rice Pudding - Dairy Free

- 1 Goya coconut milk can (13.5 oz.)
- 2 cup SO dairy free coconut milk unsweetened
- 2 cup White or brown rice
- 3 1/2 cup Water
- 2 stick Cinnamon
- 2 tsp Vanilla
- 1 as needed Cinnamon
- 1/2 cup Sugar
Directions

1Combine water and rice with cinnamon sticks in a pot bring to a boil until the water is gone

2stir, cover, and lower heat to low for about 15 min.

3Once cooked, take off heat , take out cinnamon sticks and add Goya coconut milk, and SO brand coconut milk, 1/2 c sugar, cinnamon to your liking and 2 tsp of vanilla.

4Turn heat to medium and continue stirring for 15-20 minutes until it becomes thick and creamy.

5Taste and adjust spices if needed but mine came out great!!
