Rice Pudding - Dairy Free

Ingredients

  • 1 Goya coconut milk can (13.5 oz.)
  • 2 cup SO dairy free coconut milk unsweetened
  • 2 cup White or brown rice
  • 3 1/2 cup Water
  • 2 stick Cinnamon
  • 2 tsp Vanilla
  • 1 as needed Cinnamon
  • 1/2 cup Sugar

Directions

    Combine water and rice with cinnamon sticks in a pot bring to a boil until the water is gone
  2. 2
    stir, cover, and lower heat to low for about 15 min.
  3. 3
    Once cooked, take off heat , take out cinnamon sticks and add Goya coconut milk, and SO brand coconut milk, 1/2 c sugar, cinnamon to your liking and 2 tsp of vanilla.

    Turn heat to medium and continue stirring for 15-20 minutes until it becomes thick and creamy.

    Taste and adjust spices if needed but mine came out great!!

    As an alteration you can add raisins when the milk is added
