Rice Pudding With Benedictine

- 2 cups milk
- 14 cup sugar
- 1 pinch salt
- 1 cup rice, uncooked, medium or 1 cup long grain
- 1 cup benedictine
- 12 cup golden raisin
- 12 dark raisin
- 1 pint heavy cream
Directions

1Bring the milk to a boil in a large saucepan fitted with a tight lid.

2Immediately lower the heat to simmer, and add sugar, salt, rice, and Benedictine.

3Stir until the sugar is dissolved, then cover tightly and cook for about 30 minutes.

4Lift the lid and stir the raisins and cream into the rice.

5Recover and cook for an additional 15 minutes, until the rice is very creamy and tender.

6Remove from heat, and keep covered until ready to serve.

7The longer the pudding sits, the firmer it will become.
