  • 2 slightly beaten eggs
  • 2 c. cooked rice
  • 1 c. evaporated skim milk
  • non-calorie liquid sweetened equal to 1/2 c. sugar
  • 1/2 c. light raisins
  • 1/2 c. water
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1/4 tsp. ground cinnamon

Directions

    Set a 1 1/2-quart baking dish in shallow pan on oven rack. Pour water 1 inch deep around dish.

    Pour pudding in baking dish. Bake at 350° for 45 minutes or until knife inserted off center comes out clean.
