Rice Salad

Ingredients

  • 1 c. rice, cooked
  • 2 Tbsp. thin green pepper strips
  • 1 tomato, peeled and seeded
  • 2 scallions
  • 6 Tbsp. oil, seasoned with 1/2 clove garlic
  • 2 Tbsp. vinegar
  • 1 tsp. salt
  • pepper

Directions

    Cook rice and then spread on a casserole dish.

    Cook rice in a 200° oven for 5 minutes.

    Cool this in refrigerator.

    Boil pepper strips for 1 minute.

    Rinse with cold water.

    Add peppers, scallions and tomato to cooled rice.

    Mix oil, vinegar, garlic, salt and pepper.

    Toss with rice.

    Refrigerate until time to serve.
