- 1 c. rice, cooked
- 2 Tbsp. thin green pepper strips
- 1 tomato, peeled and seeded
- 2 scallions
- 6 Tbsp. oil, seasoned with 1/2 clove garlic
- 2 Tbsp. vinegar
- 1 tsp. salt
- pepper
Directions

1Cook rice and then spread on a casserole dish.

2Cook rice in a 200° oven for 5 minutes.

3Cool this in refrigerator.

4Boil pepper strips for 1 minute.

5Rinse with cold water.

6Add peppers, scallions and tomato to cooled rice.

7Mix oil, vinegar, garlic, salt and pepper.

8Toss with rice.

9Refrigerate until time to serve.
