  • 1 (6 oz.) pkg. long grain and wild rice
  • 1/2 c. mayonnaise
  • 1/4 c. plain yogurt
  • 1 c. diced celery
  • 1 c. cubed tomatoes or cherry tomatoes
  • 1/2 c. diced cucumber
  • 2 Tbsp. parsley
  • 1/8 tsp. seasoned salt
  • 1/8 tsp. pepper
  • 1/4 c. chopped dry roasted peanuts

    Cook rice as directed on package.

    Toss lightly with next 8 ingredients.
