Ingredients

  • 1 (64 oz.) can tomato juice
  • 2 (16 oz.) cans Veg-All
  • 1 (6 oz.) pkg. Uncle Ben's long grain and wild rice
  • 1 small onion
  • 1 lb. hamburger

Directions

    Dice onion and saute lightly in large pan or skillet.

    Add hamburger and cook over medium heat until no longer pink, crumbling meat as it cooks.

    Do not brown, then add 1/2 of the tomato juice; stir in both cans of Veg-All (including juice).

    Add herbs and spices packet from rice box, stirring as you add, then add dry rice.

    Stir thoroughly and reduce heat.

    Cover and let simmer, adding rest of tomato juice as first is absorbed, until juice is used up.

    Cook until no longer soupy and rice is done. Serves 4 to 6 people and reheats nicely.
