Rich Beef Casserole

Ingredients

  • 1 1/2 lb beef, diced
  • 1 tbsp all-purpose flour
  • 1 tbsp olive oil
  • 8 None pearl onions, peeled
  • 2 None carrots, thickly sliced
  • 1 cup red wine
  • 1 cup beef stock
  • 2 tbsp tomato paste
  • 2-3 sprigs fresh thyme
  • 1 None bay leaf
  • 1 lb baby potatoes
  • 1/2 lb small button mushrooms
  • None None chopped fresh parsley, to serve
  • None None steamed green beans (optional), to serve

Directions

    Preheat oven to 350°F. Toss together beef and flour.

    Heat olive oil in a large Dutch oven over high heat. Working in batches, cook beef for 3-5 mins, until browned. Add onions and carrots. Cook for 5 mins, until golden brown. Add wine, stock, tomato paste and herbs. Season to taste. Bring to a boil, cover then transfer to oven for 1 hour.

    Add potatoes and mushrooms. Cook for another 30 mins, until beef is very tender. Sprinkle with parsley and serve with steamed green beans, if desired.
