- 12 cup caster sugar
- 2 eggs
- 1 teaspoon vanilla essence
- 34 cup ricotta cheese
- 1 cup plain flour
- 1 teaspoon baking powder
- 1 teaspoon mixed spice
- 1 cup red seedless grapes
- 12 cup honey
- cream, to serve
Directions

1Pre heat oven to 180 C.

2Grease and line a round 20 cms cake tin.

3Using electric beater, beat sugar, eggs and vanilla till pale and fluffy.

4Beat in ricotta till just combined.

5Sift in flour, baking powder and mixed spice.

6Fold dry ingredients through ricotta mixture.

7Fold through grapes.

8Spoon into prepared pan.

9Bake 25 - 30 minutes.

10Pierce top of cake with skewer.

11Place honey in jug, microwave on high for 60 seconds.

12Pout warm honey over cake and leave for 10 minutes.

13Serve warm cake with cream.
