- 2 pounds boned chicken thighs, fat removed, cut into 1-inch pieces
- 1 small red onion, diced
- 2 clove garlic, minced
- pinch of crushed red pepper flakes
- 2 bay leaves
- 1 teaspoon fresh chopped sage
- 1 teaspoon fresh chopped rosemary
- 1 cup dry red wine
- 1 can (28 ounces) imported Italian tomatoes, chopped
- 1 cup heavy cream
- 1 cup grated Parmigiano Reggiano
- Coarse salt and freshly ground black pepper
- 1 pound dried 100% semolina rigatoni
