Risotto With Shrimp

Ingredients
- 1/4 c. cooking oil
- 1 medium onion, chopped
- 1/2 c. green pepper, chopped
- 1 1/2 c. raw rice
- 1 can tomato paste
- 2 1/2 c. chicken broth
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 can shrimp or 1/2 lb. cleaned shrimp, cut small
- 1/2 c. or more peas
Directions

1Saute onion and peppers in oil.

2Add rice; cook over medium heat until tanned; stir constantly.

3Add tomato paste, salt, pepper and broth.

4Mix and cover tightly.

5Simmer without stirring for 35 to 40 minutes.

6Add shrimp and peas.

7Mix well.

8Cook an additional 5 minutes until shrimp is done.
