Risotto With Shrimp

Ingredients

  • 1/4 c. cooking oil
  • 1 medium onion, chopped
  • 1/2 c. green pepper, chopped
  • 1 1/2 c. raw rice
  • 1 can tomato paste
  • 2 1/2 c. chicken broth
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 can shrimp or 1/2 lb. cleaned shrimp, cut small
  • 1/2 c. or more peas

    Saute onion and peppers in oil.

    Add rice; cook over medium heat until tanned; stir constantly.

    Add tomato paste, salt, pepper and broth.

    Mix and cover tightly.

    Simmer without stirring for 35 to 40 minutes.

    Add shrimp and peas.

    Mix well.

    Cook an additional 5 minutes until shrimp is done.
