- 60 Ritz crackers, crumbed
- 1 stick oleo or butter, melted
- 3/4 c. chopped nuts
- 2 boxes instant vanilla pudding
- 3/4 c. coconut
- scant 1/2 Tbsp. coconut flavoring
- 1 1/2 c. milk
- 1 large Cool Whip
- 1 qt. plus 1 c. butter pecan ice cream
Directions

1Soften ice cream.

2Melt oleo.

3Add cracker crumbs and chopped nuts.

4Spread half of mixture in bottom of 9 x 13-inch pan.

5Beat pudding, coconut, flavoring and milk until thick.

6Fold in ice cream.

7Put on top of crumbs in pan.

8Spread

9with Cool Whip. Cover with remaining crumb mixture.

10Refrigerate.

11Can be made night before and covered with Saran Wrap.

12You may use instant coconut cream pudding and omit the coconut and flavoring.
