    Have rib roast at room temperature; season as you like. Preheat oven to 375°.

    Place rib side down in pan.

    Put into oven for 1 hour, then turn off heat.

    Do not open door.

    Forty minutes before you wish to serve the roast, turn oven on to 375° and let roast get piping hot.

    Takes about 40 minutes.

    Roast will be rare and juicy, if more doneness is desired, cook for 55 to 60 minutes more.
