Roast Beef Rolls

- 1 c. fresh mushrooms, minced
- 1 c. onion, minced
- 8 slices cold roast beef, sliced very thin (approximately 1/2 oz. each)
- 1/4 c. no fat Thousand Island dressing (20 calories or less per Tbsp.)
- 2 Tbsp. + 2 tsp. reduced calorie margarine
Directions

1Preheat oven to 350°.

2Saute mushrooms and onion in margarine until lightly browned.

3Spread roast beef slices with mushroom and onion filling.

4Roll each slice of beef and place seam side down in 8 x 12-inch baking dish sprayed with butter flavored cooking spray.

5Spoon dressing evenly over beef rolls.

6Bake 10 minutes or until rolls are heated through.

7Serve immediately.
