Ingredients

• 4 beets trimmed, washed and dried
• olive oil cooking spray
• 1 1/4 pounds sweet potatoes peeled, roughly chopped
• 2 red onions medium, cut into wedges
• 2 cloves garlic finely chopped
• 2 tablespoons vegetable oil
• 2 tablespoons horseradish cream
• 1/2 cup sour cream
• 2 teaspoons lemon juice
• 2 teaspoons dill finely chopped
• 3 cups baby spinach leaves
