- 1 Long Island duck
- salt and pepper
- caraway seed
Directions

1Wash duck; dry inside.

2Rub salt inside and out.

3Rub pepper inside only.

4Sprinkle caraway seed inside and out.

5Place duck on rack in roasting pan.

6Have oven turned to 400° for half hour, then turn oven down to 350° for 3 hours.

7All fat will be in the bottom of the pan and your duck will be crisp on the outside and juicy inside.

8Serve with wild rice, broccoli spears and crisp green salad.
