Ingredients
- 1 dressed duck
- 1 onion
- 1 apple
- salt and pepper
- hot water
- mashed potato and celery
- stuffing
Directions

1Thoroughly wash the dressed duck.

2Season with salt and pepper inside and out, using 1 teaspoon salt to the pound of duck and pepper to taste.

3Peel, wash and slice onion.

4Core, wash and slice apple.

5Stuff duck with onion and apple slices; truss.

6Place duck on rack in roaster.

7Put 2 cups hot water in bottom of roast pan. Bake at 400° for 15 minutes to the pound, covered.

8As duck bakes, baste with hot water to which butter is added.

9The liquid from the duck is strong and should be poured off after duck bakes about 1 hour, then basting is started.

10When done, remove onion and apple.

11Replace with dressing.

12Steam 30 minutes.
