Roast Fresh Brisket

- about 4 lb. fresh beef brisket
- 2 onions
- 2 celery stalks
- pepper
- bay leaf
- 2 carrots
- ketchup
- chopped garlic clove
- water
Directions

1Place beef fat side up in large heavy covered kettle over 1/2 of cut up vegetables.

2Spread some ketchup, generously over meat. Sprinkle with pepper and garlic clove.

3Top with rest of vegetables and 1 bay leaf.

4Add water to almost cover.

5Bring to a boil.

6Place in 325° oven for 3 or 4 hours.

7Remove meat and slice fat off top.

8Wrap in foil.

9Refrigerate overnight with heavy weight on top.

10Keeps well.

11Reheat for dinner or slice for sandwiches.
