Ingredients
- 2 Tbsp. salt or less to taste
- 1 1/4 tsp. ground ginger
- 4 bay leaves, crumbled
- 1/2 fresh 9 lb. ham, shank or butt
- 1 1/4 tsp. ground sage
- 1/2 tsp. black pepper
- 4 garlic cloves, minced
Directions

1In a bowl, mix all ingredients together except ham.

2Remove rind from ham. Score fat with a knife.

3Rub mixture over ham. Wrap ham in foil or plastic and refrigerate overnight.

4Heat oven to 425°.

5Unwrap ham.

6Place in a 13 x 9-inch cake pan.

7Roast, uncovered, for 20 minutes.

8Reduce heat to 325°.

9Baste with drippings every 30 minutes for about 4 hours or until meat thermometer registers 160° internal temperature.
