Ingredients
- 1 wild turkey
- 1 onion, quartered
- 2 Tbsp. oil
- salt and pepper to taste
- 1/2 c. melted butter
- 2 Tbsp. flour
- 2 stalks celery
- 1/4 c. soy sauce
- 1 pt. chicken broth
Directions

1Salt and pepper turkey.

2Place celery and half of onion in body cavity.

3Mix butter and soy sauce, baste breasts, legs and thighs. Place on a rack in a large pan and cover loosely with foil.

4In an iron skillet, make a roux with oil and flour.

5Chop remaining onion and saute in roux until limp.

6Add chicken broth to make gravy, then pour over turkey.

7Bake at 350° for 20 minutes per pound, basting every half hour.

8If you stuff with dressing, increase time to 25 minutes per pound.

9If the bird is to be carved ahead of time, cover with the gravy to keep moist.

10Serves 15.
