- 1 (10 lb.) goose
- Salt and pepper
- 1 c. soaked and pitted prunes
- 1 1/2 c. peeled, cored and slice apples
- 4 c. boiling water
Directions

1Season the goose inside and out with salt and pepper and stuff with apples and prunes.

2Put in a large pan and brown goose on all sides in hot oven.

3Add 4 cups boiling water and baste. Roast for 3 hours at 325°.

4For crisp skin, pour 2 tablespoons water over the goose and let brown 15 minutes.

5Skim fat from drippings.

6Strain and thicken for gravy.

7Serve with your favorite side dish (red cabbage is good), potatoes and a green salad.
