  • 4 None naan flatbreads
  • 1 cup pizza sauce
  • 1 small red onion, thinly sliced
  • 10 oz leftover roast meat or ham
  • 1 tub (8 oz) baby bocconcini (mozzarella)
  • 10 oz leftover roast pumpkin or butternut squash, cut into cubes
  • 1 cup grated mozzarella cheese
  • 1 cup baby arugula leaves

Directions

    Preheat the oven to 400°F. Lightly grease 2 large baking pans.

    Place flatbreads on prepared pans. Spread with pizza sauce. Top with onion, leftover meat, bocconcini, pumpkin and mozzarella.

    Bake 15-20 mins, or until golden and crisp. Top with arugula and cut into slices to serve.
