- 1 young opossum
- 2 tsp. salt
- 4 red chili peppers, chopped
- 1 red bell pepper, chopped
- 1 large onion, chopped
- 1/2 tsp. pepper
- 4 sweet potatoes, peeled and quartered
- 6 stalks celery
Directions

1Put skinned and cleaned opossum in large kettle, cover with water.

2Add salt, peppers, onion, and bring to boil; reduce heat, and simmer for 30 minutes.

3Remove meat, place in roasting pan. Increase heat and boil water mixture until only 3 cups remain. Pour over meat in roasting pan.

4Cover and roast in oven at 350° for 30 minutes.

5Add sweet potatoes and celery.

6Baste meat, cover, and roast for an additional 30 minutes or until tender.
