- salt
- 1 whole young pheasant
- 1 bay leaf
- 3 to 4 celery leaves
- 4 slices bacon
- 1/3 c. salad oil
- 1/2 c. mushroom pieces
- 1 large onion, sliced
Directions

1Thoroughly salt pheasant inside and out.

2Fill cavity with bay leaf and celery leaves.

3Wrap pheasant breast with bacon.

4Secure in place with string.

5Place pheasant in roaster.

6Pour salad oil over pheasant.

7Add mushrooms and onion slices.

8Bake at 350° for 1 hour and 30 minutes.

9Turn pheasant at 30 minute intervals, basting with drippings from pan.

10Place on platter; remove string, celery leaves and bay leaf.

11Garnish with spiced apples and parsley.
