- 2 cups raw pecan halves
- 2 tablespoons unbleached cane sugar
- 2 tablespoons brown sugar
- 1 1/2 tablespoons canola oil
- 1 tablespoon real butter, melted
- 1/4 teaspoon pure vanilla extract (NOT imitation) or 1/2 teaspoon vanilla powder
- 1/4 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/8 teaspoon ground allspice
- 1 pinch freshly grated nutmeg
- 1 pinch ground cardamom
- 1 pinch ground star anise
Directions

1Preheat a baking sheet in the oven at 350 degrees.

2In a bowl combine all the ingredients and toss to coat.

3Spread the nuts singly on a baking sheet and bake for about 20 minutes, or until the pecans are browned and crispy. Stir nuts occasionally to avoid burning and to roast evenly. *Watch* oven carefully!

4Set baking sheet aside to allow nuts to cool completely. Once cooled, transfer to airtight container.
