- 8 whole heads fresh garlic
- 1/3 c. olive oil
- 1 1/2 tsp. freshly ground pepper
- 1 1/2 tsp. dried thyme
- 1 tsp. salt
Directions

1Preheat oven to 350°.

2Trim off each garlic head to expose the tops of the cloves.

3Place heads in shallow baking dish, such as a 9-inch pie plate.

4Drizzle garlic with oil and sprinkle with pepper, salt and thyme.

5Roast garlic for 30 minutes.

6Reduce heat to 250° and cook for 1 hour longer.

7Serve garlic with slices of crusty French bread, butter and goat cheese, such as Feta.

8Pop the cloves out of the skins and spread on bread.
